Cape Town: the Schooling Begins!

Londolozi is its’ own living Natural History Museum and I hope that the kids will grow up with fond recollections of it. Liberal amounts of the natural sciences, can however come at the expense of some of the high street offerings. This past week was a great opportunity to shepherd the kids through something a little different.

Emma’s First Souffle

Emma’s Spinach Soufflé

Inspired by Ina Garten: The Barefoot Contessa

Ingredients:

1 x cup milk (warm)

3 tablespoons butter

2 Tablespoons flour

½ spoon nutmeg

Pinch of chilli flakes (optional)

Pinch salt and pepper

4 extra large egg yolks (room temperature)

5 extra large egg whites (room temperature)

½ cup cheddar cheese

¼ cup parmesan cheese

1 packet of spinach (I used fresh, but you can also use frozen)

½   teaspoon apple cider vinegar (or use Cream of Tartar or white vinegar)

Method:

If you have fresh spinach, chop it up and put in boiling water with a pinch of salt, cook for less than 5 min. Once it is soft drain it off and let it cool down. Continue reading
